Yumm... I love this recipe... but it takes too long... so here we go! Shorten the time in a pressure cooker and it is even better because meat cooks so well and so tender in pressure cookers.
Grocery List:
- Thawed Chicken Breast (As Many as needed)
- Ham
- Cheese of choice. I used Swiss
- Good Seasonings Italian Salad dressing (powder in packet)
- Your Favorite Breading
- Garlic Olive Oil
- Toothpicks
- Butter
Directions
- Pound out chicken till about 1/2 in thick or whatever looks wide enough to roll insides in.
- Sprinkle Italian Dressing Seasoning over inside of flattened chicken then layer cheese (I placed 3 slices) and Ham... as thick as you'd like.
- Roll tightly trying to keep cheese and ham inside as much as possible
- place toothpicks in ends to hold together as it cooks.
- Place chicken rolls in pressure cooker over hott garlic Olive Oil
- Egg Wash or butter tops of Breasts and Sprinkle Breading over top.
- Cook at full pressure for 8-10 min and release pressure immediatly.
Serve with Green Beans and a Roll or any wonderful simple fast side dish!
TIP:
If you serve with green beans try canned french style with some of that leftover italian seasoning sprinkled on top! Mmmm...

love this recipe, although the bottom of my cooker was burnt to a crisp at the end! I'm a newbie to pressure cooking, so I think I need more practice. Amazingly, the chicken was good and my daughter loved it :)

ReplyDeleteHas anyone tried this other than the one comment by the Roaming Richmonds comment about their pot being burnt to a crisp? Which seems like it would make sense without additional liquid to build the pressure... but wishing the author of the recipe would respond to the questions.

ReplyDeleteWas the chicken cooked in a stainless steel bowl inside the pressure cooker with water inside the pot but not the bowl?
ReplyDeleteHave to add at least 1 cup chicken broth or liquid to bring to pressure to prevent pan from burning. If you want to saute in oil for 1 min it will allow for some Browning. Remove chicken. Add broth stir to deglaze pan. Add chicken back after egg wash and bread crumbs. Cook for 8 to 10 min.
